In a world that changes every second, it’s good to know that some things stay the same.

To demonstrate just how far artificial intelligence can go in our lives — particularly in what we eat — we developed an algorithm capable of creating a fully lab-produced extra leg ham.

To test its quality, we decided to compare it with the market’s benchmark in flavour — a ham produced using traditional recipes that honour the essence of ham and the taste of the Portuguese.
